This recipe is based on of “Nearly Normal Cooking” by Jules E. Shepard.  I did change it some.

Preheat oven to 325 F.

Ingredients:

3 cups of cooked sweet potatoes

1 tsp. Vanilla Extract

2 eggs-slightly beaten

1 cup of Sugar

1/2 cup melted butter

1 tsp Cinnamon

1/2 tsp Nutmeg

1 tsp of Maple Sugar(optional)

1/2 tsp Pumpkin Pie Spice (optional)

Topping

1 cup dark brown sugar

1 cup pecans (a half cup can also be used)

1/3 cup of corn starch or arrowroot

1/4 cup of melted butter

Instructions:

Peel and boil the sweet potatoes on low for 1 hour

Put all ingredients into mixing bowl and beat on medium speed until smooth

Pour into greased casserole dish ( I use 9 x 13)

Combine all topping ingredients by hand and sprinkle over the casserole bake for 50 mins.
